Join Alessio Cicchini (aka Rucoolaaa), a food waste expert and advocate for sustainable living, on an eye-opening journey through Copenhagen to explore innovative solutions to one of today’s biggest environmental challenges: food waste.
TRIP PURPOSE
Raise awareness and engage participants in the fight against food waste through direct experiences with local projects that promote sustainable and conscious practices. We aim to inspire concrete actions for more responsible and sustainable consumption.
This trip has been designed based on the following principles:

Explore Copenhagen’s urban sustainability projects, from Øens Have’s urban farm to the initiatives at Torvehallerne market. From the rooftop garden bar at Gro Garden to the eco-village at BaneGaarden, enjoy the serenity of Copenhagen’s green spaces. Relax with a natural wine or kombucha in a breathtaking setting while soaking in the city’s sustainable vibe.
Note: Italian will be the main language of the trip, but some activities could be conducted in English. Pack your curiosity and an appetite for change—we’ll be talking food waste and eating sustainably (so no leftovers, obviously)!
IMPORTANT INFO
We will meet associations and projects working in the city and globally on food waste! These projects work to waste as little food as possible and do their part in the fight against food waste. We will also have the opportunity to actively participate in some of their activities!We will visit some Urban Farms, green oases in the city, and their story will be explained. We are very keen to take you to Absalon's community dinner: we will dine there to experience conviviality and meeting the local community. The menu is published the week before, so we will choose which night we join this fantastic dinner based on the vegan options offered. Community dinners are very common in Denmark.

- Food: 4 Breakfast, 1 lunch.
- Accomodation: 4 nights at hostel.
- Activities: 1 community dinner at Absalon, 1 visit to the urban farm Øens Have with a snack included, visit to the BaneGaarden ecovillage with a drink included at their bakery, 1 volunteer activity with MADBOKS, meeting with Eat Wasted Team.
- Other: Support from an ORMA coordinator throughout the entire trip.
- Insurance: Medical and baggage insurance.

- Accomodation: City tax.
- Transporation: Transfer from/to station/airport. Flight from and to Copenaghen starting from €200.

30% down payment at the time of booking and the remaining 70% due 30 days prior to departure.
If the booking is made within 30 days of departure, the full amount is due at checkout.

ITINERARY
Day 1: Arrival and Introduction to Copenhagen
Upon arrival, you will settle into your accommodation and meet Alessio for an initial exploratory walk around the city. We will stroll through some of Copenhagen's most significant areas, starting to get to know the urban context and its relationship with sustainability.
For dinner, if possible, we will go to Absalon (which starts quite early, around 5:30 PM). If not, we will choose another option for a welcome dinner. If the dinner at Absalon takes place today, we will meet the team from Eat Wasted, who will show us how it’s possible to both reduce waste and create something new at the same time. Their project transforms surplus bread into pasta, helping to reduce food waste while feeding people in need.
Day 2: A Day of Urban Farming
Start the day with a visit to Øens Have at 11:00 AM, an urban farm, seasonal restaurant, and event space dedicated to sustainability. Here, we will be served a vegan cake accompanied by coffee while exploring the garden and learning about the project's vision: making the city greener and connecting people to the local ecosystem.For lunch, our coordinator will have a list of recommended places based on the group’s preferences.In the afternoon, from 5:00 PM onwards, we can head to Gro Garden Rooftop Bar, a rooftop garden where we can relax in a green and welcoming environment, enjoying natural wine, artisanal kombucha, or exclusive house drinks, all while taking in the spectacular city view. Free dinner.
Day 3: Another Green Oasis
We will visit BaneGaarden, a green oasis in the heart of Copenhagen. This gourmet ecovillage, made out of old wooden barns, is a center for sustainable culinary experimentation. We will explore the project and stop by their PERRON bakery for those who want to sample some local products. (They have vegan options)
2:30 - 5:30 p.m. Volunteer activities with MADBOKS an association that collects discarded food from markets and supermarkets - FOOD DISTRIBUTION WITH MADBOKS

If the dinner at Absalon takes place today, we will meet the team from Eat Wasted, who will show us how it’s possible to both reduce waste and create something new at the same time. Day 4: Conscious Consumption
We will start the day by visiting Torvehallerne, a market where, to curb food waste, an agreement has been made with the app Your Local, which allows stores to put unsold food back into circulation.
We will explore Christiania, Copenhagen's famous free neighborhood.
For lunch, we will take you to Morgenstedet, a restaurant located within Christiania, based on sustainability and health principles. All dishes are vegetarian and prepared with organic ingredients.
In the afternoon, we will head to one of the city's most second-hand shopping areas to discover the sustainable side of shopping. We will also visit WeFood, Denmark's first supermarket that exclusively sells products destined for the trash but still perfectly good by health standards. Here we will see first-hand a concrete initiative to combat food waste and reduce waste.
The rest of the evening is free.
Day 5: Departure and Final Reflections
In the morning, we will take a moment to reflect on what we have learned in the previous days. Based on the group’s preferences and departure times, we will decide which part of the city to visit together before the final goodbyes.

Alessio Cicchini, better known as @rucoolaaa on social media, is a content creator and educator specializing in food waste reduction, plant-based cooking, and zero-waste practices. Through his colorful and humorous content, he demonstrates how to give new life to often overlooked kitchen scraps, turning them into delicious dishes.
In addition to recipes, a key feature of @rucoolaaa's content is his "cooletti" — a fun and engaging way to introduce regrowing, a unique cultivation method that uses food scraps to grow new vegetables instead of discarding them.
With a background as a social media manager, food specialist, and recipe developer in the food and wine industry, Alessio now dedicates himself full-time to social media education, as well as hosting workshops and lectures in schools and universities.

What is the average age of participants? Are there age limits?

Participants are generally between 22 and 45 years old, with an average age of 30-35. There are no age limits: we accept minors (with legal guardian consent) and people over 45. However, consider the type of trip, as some activities may require good physical condition.
What are the exact arrival and departure times?

Our trips typically start around lunchtime or early afternoon, with departures in the same timeframe. However, times may vary depending on the destination. We remain flexible so everyone can plan accordingly. If you arrive late or need to leave early, just let us know in advance.
Is vegan/vegetarian food available? What about celiac disease?

Absolutely! Many of our coordinators and participants are vegetarian or vegan, so we always choose restaurants with suitable options. Our trips can also accommodate celiac disease, as long as we are informed in advance. The same applies to any allergies or intolerances.
When is the trip officially confirmed?

For long-haul or non-European trips, confirmation happens at least 1.5 months before departure. If the trip isn’t confirmed by then, it will be canceled. For shorter trips, confirmation happens 3-4 weeks before departure. You’ll receive an email once the trip is confirmed, along with a link to the Telegram group to coordinate logistics with other travelers.
Can I travel with the creator? What transport does the creator use, and from where?

Yes! If the transport type, departure station, and schedule are already set, they will be listed on the trip page. If not, we’ll share this information in the Telegram group once the trip is confirmed.
